Waipara Valley, just north of Christchurch, is one of New Zealand's most exciting wine regions, celebrated for its outstanding Pinot Noir, Riesling, and aromatic whites. Plan for at least a full day to explore the valley properly. Start mid-morning with a tasting at two or three wineries, break for a leisurely lunch at one of the winery restaurants (Pegasus Bay or Black Estate are excellent choices), then continue to a couple more cellar doors in the afternoon. If you're a serious wine enthusiast, a second day allows you to visit smaller producers and perhaps take a vineyard tour.
