Plan at least two full days to experience both glaciers properly. Spend your first day on a guided ice hike or heli-hike (half-day) and the afternoon exploring the valley walks. On the second day, head to Fox Glacier for Lake Matheson at sunrise, then take a scenic flight or another walk. If you're short on time, a single day can cover a heli-hike on one glacier and a quick visit to the other's viewpoint, but you'll miss the slower magic of the place.
