Waimate is a charming rural town on the South Island's east coast, often overlooked by travellers racing between Christchurch and the West Coast. Waimate can be comfortably explored in half a day, but to catch the penguins at dusk and do the white heron tour (which runs twice daily), plan for a full day. It works well as a lunch stop or an overnight stay, especially if you're breaking the drive between Christchurch and the West Coast.
