Dedicate at least two to three days to fully experience Christchurch's outdoor offerings. Use one day for a half-day hike on the Port Hills and an afternoon at the Adventure Park. On day two, drive to Akaroa for a dolphin cruise and a coastal walk. If you have a third day, head north to Kaikoura for whale watching or south to the Rakaia Gorge for jet boating. Many activities are doable as half-day trips, so you can mix and match with city sightseeing.
